Pumpkin Waffles

{photo credit: FoodNetwork.com}

So, Cute Kid is a complete waffle addict. "Waffle" was even one of her first words. Shelooooooves waffles. So, in planning Cute Kid's Friday birthday, David and I have decided that waffles will definitely be on the menu.

Now, these can't be just any old waffles. It's her birthday! They have to be fantasticwaffles. I found this recipe on FoodNetwork.com and think it's the winning recipe. Perhaps you should try them too.

Pumpkin Waffles with Maple Walnut Apples

  • 1 cup cake flour
  • 1/4 cup wheat germ
  • 1/3 cup granulated sugar
  • 1 tablespoon baking powder
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon freshly grated nutmeg
  • 1/2 teaspoon fine salt
  • 3/4 cup milk
  • 1/2 cup pumpkin puree
  • 1/4 cup melted butter
  • 1/4 cup melted shortening (transfat-free)
  • 1 large egg
  • 1 large egg white

Topping:

  • 2 to 3 tablespoons unsalted butter
  • 2 crisp apples, peeled and sliced thinly
  • 1/4 cup pure maple syrup
  • 1/2 cup toasted walnuts

Directions:

Special equipment: standard 4 x 4-inch waffle iron

For the waffles: Preheat a waffle iron to medium heat.

Whisk the flour, wheat germ, sugar, baking powder, spice and salt together in a large bowl.

Beat together the milk, pumpkin, melted butter, and melted shortening, egg and egg white, in a large measuring cup. Make a well in the center of the dry ingredients and pour in the wet ingredients. Whisk together to make a slightly lumpy batter.

For the topping: Melt the butter in a skillet over medium heat. Add the apples and let cook until slightly browned, but still crisp, about 4 minutes. Add the maple syrup and walnuts and toss to coat.

Pour and spread about 1 cup batter into the waffle iron. Cover and cook until crisp and a rich golden brown, about 7 minutes. (Try to resist the temptation to open the waffle iron too soon. Steam will puff out of the iron while the waffles cook, when this stops the waffle is cooked.) Repeat with the remaining batter. Serve hot with the apples.

Snow...

Lily in the Snow

So, I just sat down at my computer and was soon met by the sound of rain. No big surprise there, as I have felt lately as if I live in a wintery rainforest. Then I look out and see that it's not rain; in fact, that sound was coming from snow! That is some loud snow. Now it's just back to rain again - actual rain - but I still feel like sharing this recent picture of Cute Kid playing in the snow. If she's not the cutest kid in the world then I don't know who is.

Going out this morning and then spending the day here working on Fido's new template. It is stinking cute thus far. Eek!

Ciao!

iMac Box

Ahhhh!! So... after days of near computer crashes, lots of vile words exiting my mouth, and a near breakdown, I finally committed... AND BOUGHT A NEW iMAC!

I'm in computer heaven. The screen alone is almost twice the size of my old honker (a 4 year old Dell), and it has 16 times more RAM.

So, I'll be spending the day transferring files and loading programs (my least favorite part of buying a new computer) and then I start a new design project tomorrow. Soexcited to be able to do it on the new Mac.... I love Apple.

About Me

Saturday, January 30, 2010

My name is Emily, and I'm addicted to lots of things. Things like to-do lists, shoes, travelling, and chocolate indulgences.

By day I'm a mom and homemaker. By evening/night I'm a graphic and web designer.

I graduated college in 2009 with a degree in Geography and a certificate in Geographic Information Systems. Surprisingly, I was taught to do much more than draw maps. After graduation I realized that I wasn't meant to be a scientist or a GIS weenie, so I took those skills and turned them around to work for me. Now instead of building databases, I build websites, and instead of choosing typography for cartography, I choose it for branding. I turned my science into art. And I love what I do.

When I'm not working I'm playing with Lily, cooking, perhaps doing something crafty like painting or knitting, or I have my nose deep into a good book.

My blog reflects the many facets of me. Thanks so much for stopping by, and enjoy!
